Avocado Pesto Pasta

  • 230g Rigatoni Pasta
  • 150g Creative Gourmet Frozen Avocado Slices (Thawed)
  • 1 bunch Fresh Basil, Destemmed
  • 5 Cloves of Garlic
  • 1/4 cup Pinenuts
  • 3 Tablespoon Extra Virgin Olive Oil
  • 1/4 Parmesan, Grated (Plus extra to serve)
  • 1/2 Teaspoon Salt
  • 1/2 Pepper


  1. Bring a Pot of water to boil, add salt to water and cook Pasta according to instructions on package.
  2. Combine all Pesto Ingredients except Pasta in a Food Processor and process until smooth.
  3. Drain Pasta and toss over low heat with Pesto.
  4. Serve warm with extra Grated Parmesan.
