Avocado Pesto Pasta
- 230g Rigatoni Pasta
- 150g Creative Gourmet Frozen Avocado Slices (Thawed)
- 1 bunch Fresh Basil, Destemmed
- 5 Cloves of Garlic
- 1/4 cup Pinenuts
- 3 Tablespoon Extra Virgin Olive Oil
- 1/4 Parmesan, Grated (Plus extra to serve)
- 1/2 Teaspoon Salt
- 1/2 Pepper
- Bring a Pot of water to boil, add salt to water and cook Pasta according to instructions on package.
- Combine all Pesto Ingredients except Pasta in a Food Processor and process until smooth.
- Drain Pasta and toss over low heat with Pesto.
- Serve warm with extra Grated Parmesan.
