Summer Watermelon & Prawn Salad

Ingredients
- 1kg medium cooked prawns, peeled, deveined leaving tails intact
- 1 cup Creative Gourmet Frozen Watermelon Chunks (defrosted)
- ¼ cup small basil leaves
- 1 cup salad greens
- ½ cup cherry tomatoes
- 200g marinated feta cubed
- ¼ cup lemon juice
- 2 tablespoons extra virgin olive oil
- Pepper to taste
Method
- Arrange the prawns, defrosted watermelon, mint and feta on serving plates. Drizzle with the lemon juice and oil and season with pepper.
